Malfatti recipe

Serves : servings 

Preparation time : 30 minutes (plus cooking and grilling time)

Ingredients : 
1)  700 g spinach leaves
2)  150 g ricotta or other cream cheese
3)  3 egg yolks
4)  60 g plain flour
5)  salt
6)  pepper
7)  ground nutmeg
8)  3 tbsp butter
9)  60 g Parmesan
10)  fat for greasing
Preparation Method :
1) Sort and thoroughly wash the spinach, put dripping wet into a pan on a medium heat and allow to wilt whilst stirring. Remove, drain in a sieve and squeeze out. Chop finely.

2) In a bowl, stir the ricotta with the egg yolk and the flour into a smooth mixture. Fold in the spinach and mix everything into a smooth dough. Season with salt, pepper and nutmeg.

3) Bring some salted water to the boil in a large saucepan. Using a spoon, cut out little dumplings from the spinach mixture and drop them into the water. Cook the dumplings over a moderate heat for approx. 10 minutes until they rise to the surface.

4) Remove the dumplings from the water, drain and put in a greased oven-proof dish. Dot the butter on top and sprinkle with the Parmesan cheese. Place the malfatti under a hot grill for approx. 3 minutes. Serve with a tomato salad.
