Preparation Method :
1) Sieve the flour into a bowl, create a
hollow in the middle and put the salt, oil, yeast and 165 ml lukewarm
water into it. Allow to stand for 5 minutes. Stir the flour into the
yeast mixture and blend into a dough.
2) Knead the dough well for approx. 10 minutes by hand until it is smooth and shiny. Cover and allow the dough to rise in a warm place. Then roll the dough out so that it is very thin and cut out 40 little discs. Place 20 discs on a greased baking sheet.
3) Mash the cheese with a fork. Wash the rocket and shake it dry. Drain the tomatoes and dice into small pieces. Pre-heat the oven to 200 °C (Gas Mark 6, fan oven 180 °C).
4) Put one teaspoon of cheese, two rocket leaves and a few cubes of tomato on each disc and add a little pepper to each. Cover with the remaining discs and press the edges together. Bake for approx. 15 minutes until crispy. Brush with olive oil and serve.
