Preparation Method :
1) Put the egg yolks in a bowl with the mustard and a
little salt. Mix them together until well combined.
2) Start drizzling in the oil, a few drops at a time, whisking constantly, until the mixture has thickened. Keep adding the oil, very gradually, until you have incorporated it all. If the mayonnaise seems to be becoming greasy or too thick to work with, add a few drops of warm water and whisk thoroughly before adding any more oil.
3) Taste the mayonnaise, then add more seasoning and a squeeze of lemon or a few drops of vinegar if you think it needs some acidity.
GARLIC MAYONNAISE
- To make garlic mayonnaise, finely chop 2 garlic cloves and mash them to a paste with a little salt. Put this in a bowl with the egg yolks and mustard, mix well until combined and proceed as above.
