Spring chilli blossom Recipe

MAKES : 1 LARGE OR 2 SMALL DRINKS

Ingredients : 
1)  DRIED RED CHILLI, preferably Kashmiri, 1–2 pieces

2)  CHOPPED FRESH ROOT GINGER 1 tablespoon

3)  CINNAMON STICK 1

4)  VANILLA EXTRACT 1 teaspoon (optional)

5)  ORANGE ZEST from 1 orange, thinly sliced

6)  POMEGRANATE JUICE 200ml (7fl oz)

7)  COX’S APPLE JUICE 4 tablespoons

8)  ICE CUBES AND CRUSHED ICE

9)  GRENADINE 2 teaspoons
Preparation Method :
- Put the chilli, ginger, cinnamon, vanilla, if using, and orange zest in a pan and toast over a low heat until lightly browned.

- Put the pomegranate and apple juices into a cocktail shaker or large screwtop jar, along with the toasted spice mixture and some ice cubes. Shake for 20 seconds, then strain into a large glass or 2 small glasses half-filled with crushed ice.

- Drizzle with the grenadine and serve straight away.

Note :
The spices left in the strainer can be reused for flavouring a neutral spirit .
