Mint & lemon grass tea Recipe

MAKES : 4 LARGE CUPS 

Ingredients : 
1)  WATER 1 litre (1¾ pints)

2)  FRESH MINT 1 sprig, leaves torn

3)  LEMON GRASS 1 stem, chopped

4)  TEA LEAVES 3–4 teaspoons

5)  HOT OR COLD MILK to serve
METHOD 1
Put the measured water into a saucepan with the mint and lemon grass and bring to the boil. Put the tea leaves into a teapot and pour the boiling water over them. Cover and infuse for 2–3 minutes, then serve with hot or cold milk, as you wish.

METHOD 2
Put the water into a saucepan with the mint, lemon grass and tea leaves. Bring to the boil, then pour into a teapot and strain into individual cups. Serve with hot or cold milk, as you wish.

METHOD 3
Put the water into a saucepan with the mint and lemon grass and bring to the boil. Add the tea leaves and return to the boil. Add milk to taste and again return to the boil. Take off the heat, cover with a lid and leave to settle for 2–3 minutes. Pour and serve.
