1) SAFFRON THREADS a pinch

3) CONDENSED MILK 300g (10½oz) canned

5) GROUND CARDAMOM ¼ teaspoon, or to taste
6) PISTACHIOS 2 tablespoons, crushed or chopped
7) FRESH ROSE PETALS AND/OR FLAKES OF SILVER OR GOLD LEAF a few, to decorate

Preparation Method :
- Preheat the oven to 160°C/325°F/Gas Mark 3.
- Heat the saffron threads in a warm small frying pan over a gentle heat until crisp, then transfer to a small bowl.
- Put the yogurt, condensed milk and milk into a bowl and whisk until frothy. Add the cardamom and pistachios, crumble in the saffron and beat well.
- Pour the mixture into a heatproof glass bowl or a baking dish and place in a roasting tray. Put the tray on the middle shelf of the oven and pour in enough boiling water to come 1cm (½in) up the sides of the bowl or dish. Bake for 25–30 minutes, then insert a skewer to see if it is set – it should come out clean and dry. If not, give it a few more minutes. Transfer the bowl or dish to a work surface and leave to cool before covering and refrigerating.
- To serve, decorate with the rose petals and/or silver or gold leaf.
