Preparation Method :
1) Mix the flour, egg yolks and eggs
together in a bowl. Add as much milk as needed to create a creamy
batter. Season the batter with a pinch of salt and allow it to rest for
20 minutes.
2) Wash the potatoes and cook in their skins in lightly salted water. Drain, allow to cool slightly, peel and mash. Mix the ricotta with the mashed potato, then season everything with salt and pepper.
3) Cut the chives into little rolls, then peel and chop the onion. Mix both into the mashed potato and cheese mixture. Add a little water if required.
4) Fry pancakes one after the other made from the batter in the clarified butter. Put the cheese and potato mixture on top of the pancakes, roll the pancakes up and cut into bite-size pieces.
