Pancakes
1) 300 g plain flour
2) 500 ml milk
3) 6 eggs
4) salt
5) pepper
6) 1 pinch freshly grated nutmeg
7) 2 tbsp freshly chopped chervil
8) 5 tbsp oil
Salad
1) 1 lollo rosso
2) 1 oak-leaf lettuce
3) 1 bunch radishes
4) 4 tomatoes
5) 4 tbsp white wine vinegar
6) 5 tbsp olive oil
7) 1 tsp mustard
8) salt
9) pepper
Preparation Method :
1) Work the flour into a liquid batter
with the milk and eggs, and season with salt, pepper, nutmeg and
chervil. Allow to rest for 30 minutes.
2) In the meantime, wash and spin the salad leaves dry and tear into small pieces. Wash, dry and slice the radishes and tomatoes. Prepare a dressing from the vinegar, olive oil, mustard, salt and pepper.
3) Heat the oil in a frying pan and, from the batter, fry 8 golden brown pancakes one after the other. Mix the salad ingredients in a bowl with the dressing and serve with the pancakes.
